Zorba Chicken 19th March 2018


1kg Diced Chicken breast (or use the left overs from a roast dinner)

1 tbs Lemon or Lime Juice

1 tbs Mint Sauce

1 tbs Honey

1 tps Cumin

1 tps Turmeric

1 tps Coriander

Put all the diced chicken in a bowl. Add all the other ingredients, and mix thoroughly. Put it in the fridge for 20-30 minutes to marinate.

One marinated, cook the chicken through on the hob using a large saucepan or frying pan, preferably with a lid, so it can cook in it’s own juices  (there is no need to add oil). If you have used cooked chicken, you may wish to add a little water to the mix.

Serve with salad, or mix with natural yogurt, and it makes a lovely sandwich filling for wraps or pitta bread.
