Apple Sandwich Cake

150g Self Raising Flour

4 Eggs

250g Apple sauce


Sift the flour. Separate the eggs into two bowls. Whisk the egg whites until stiff.

Beat the egg yolks and add 150g of apple sauce until all the lumps have gone.

Carefully fold the flour into the mixture, followed by the egg whites.

Split the mixture between two 20cm cake tins and bake for 15 minutes at 180°C or until a fork comes out of the mixture clean.

Once cooled, spread the remaining apple sauce on one layer, and make the cake like a vanilla sponge.
