Victoria Sandwich

In honour of the up-coming Royal Wedding Vanilla Sponge Cake

100g Self Raising Flour

100g Cater Sugar

100g Butter

2 Eggs

1 Teaspoon Baking Powder

1 Teaspoon Vanilla Flavouring


Mix all ingredients together and bake in two 17cm tins.

For the filling use Jam, Butter Cream (or both)

Butter cream

100g Icing Sugar

100g butter

A splash of milk.


Whisk butter and sugar together.  Add milk to create a softer texture.

Sprinkle some icing sugar over the cake to decorate.
