Sun-dried Tomato Chicken and Rice

4 chicken breasts

1 onion (finely chopped) or a 100g of frozen diced onion.

1 tbl lazy garlic

2 tsp smoked paprika

1 tsp mixed herbs

1 boil in the bag of basmati rice

400g tin of chopped tomatoes

100g of sun-dried tomatoes

Fresh basil leaves (to serve)

Cook the rice as instructed on the packet.

Slice the chicken into strips, and then cook through using a little oil from the sun-dried tomatoes. Once cooked, remove from the heat and put on a plate.

Add onion, garlic and paprika to the pan and cook the onions through.

Slice the sun-dried tomatoes into chunks about 1cm each.

Add the tinned tomatoes, sun-dried tomatoes and herbs to the onion mixture.

Heat through, and return the chicken to the mixture.

Once cooked, drain the rice, and pour the rice into the tomato mix, and stir thoroughly.

Serve, with a few basil leaves.
